**Ingredients:**
- 2 cups mixed vegetables (carrots, peas, beans), boiled and mashed
- 3-4 boiled potatoes, mashed
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 cup breadcrumbs
- 1/2 tsp ginger-garlic paste
- 1/2 tsp garam masala
- 1/2 tsp cumin powder
- Salt to taste
- 1/4 cup coriander leaves, chopped
- 2 tbsp oil for sautéing
- Oil for frying

**Instructions:**
1. In a pan, sauté chopped onions and green chilies until onions are translucent.
2. Add ginger-garlic paste and sauté for a minute.
3. Add mashed vegetables and potatoes. Mix well.
4. Add garam masala, cumin powder, salt, and chopped coriander leaves. Mix until well combined.
5. Let the mixture cool. Once cool, shape the mixture into patties.
6. Roll each patty in breadcrumbs for a crispy texture.
7. Heat oil in a pan for frying. Fry the cutlets until golden brown on both sides.
8. Place them on a paper towel to absorb excess oil.
9. Serve hot with chutney or ketchup.
