Chicken briyani recipe

- 2 cups basmati rice
- 500g chicken, cut into pieces

- 1/4 cup chopped mint leaves

Instructions:

1. Rinse the rice thoroughly and soak it in water for 30 minutes. Then, cook the rice until it's 70-80% done. Drain and set aside.

2. In a large pan, heat oil or ghee. Add the whole spices and sauté until fragrant.

3. Add sliced onions and cook until golden brown. Remove half for later garnish.

4. Add ginger-garlic paste, chicken pieces, and cook until the chicken is browned.

5. Stir in chopped tomatoes, biryani masala powder, yogurt, mint, and coriander leaves. Cook until the oil separates.

6. In a separate pot, layer half of the partially cooked rice, followed by the chicken mixture. Repeat the layering, finishing with a rice layer on top.

7. Sprinkle the reserved fried onions, mint, and coriander leaves on top.

8. Cover the pot tightly with a lid and cook on low heat for 20-25 minutes, allowing the biryani to steam and the flavors to meld.

9. Once done, gently fluff the biryani with a fork.
