here's a simple recipe for Peanut Poha:
Ingredients:
- 2 cups flattened rice (poha)
- 1/2 cup roasted peanuts
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1/2 cup chopped onions
- 1/2 cup chopped tomatoes
- 1/4 cup chopped cilantro (coriander leaves)
- 1/4 cup grated coconut (optional)
- Juice of 1 lemon
- Curry leaves (optional)
- Chopped green chilies (optional, for extra heat)
Instructions:
1. Start by rinsing the poha under cold water for a minute or two until they become soft but not mushy. Drain well and set aside.
2. Heat oil in a large pan or kadai over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
3. Add chopped onions and curry leaves (if using). Sauté until the onions turn translucent.
4. Add chopped tomatoes and cook for a couple of minutes until they soften.
5. Add turmeric powder, red chili powder, and salt. Mix well.
6. Now, add the rinsed poha to the pan. Gently toss everything together until the poha is evenly coated with the spices. Cook for a few more minutes.
7. Add the roasted peanuts, chopped cilantro, and green chilies (if using). Mix well and cook for another couple of minutes.
8. Finally, add grated coconut (if using) and squeeze the lemon juice over the poha. Mix well and cook for a minute.
9. Your Peanut Poha is ready to serve. Garnish with extra cilantro and peanuts if desired. Enjoy!
