Malai Kofta recipe

here's a basic recipe for making delicious Malai Kofta:

Ingredients for Kofta:
- 2 cups of boiled and mashed potatoes
- 1 cup of grated paneer (Indian cottage cheese)
- 2 tablespoons of cornflour
- Salt to taste
- 1/2 teaspoon of red chili powder
- 1/2 teaspoon of garam masala
- Oil for frying

Ingredients for Gravy:
- 2 tablespoons of oil or ghee
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1/4 cup of cashew nuts, soaked in warm water and blended into a paste
- 1 teaspoon of ginger-garlic paste
- 1/2 cup of cream
- 1 teaspoon of red chili powder
- 1/2 teaspoon of turmeric powder
- 1 teaspoon of garam masala
- Salt to taste
- 1/2 teaspoon of sugar (optional)
- Chopped coriander leaves for garnish

Instructions:
1. To make the kofta, mix mashed potatoes, grated paneer, cornflour, salt, red chili powder, and garam masala in a bowl. Knead the mixture into a smooth dough.
2. Divide the dough into small portions and shape them into round or oval koftas.
3. Heat oil in a pan and deep fry the koftas until they turn golden brown. Drain them on paper towels and set aside.

For the Gravy:
1. Heat oil or ghee in a pan, add chopped onions, and sauté until they become translucent.
2. Add ginger-garlic paste and sauté for a few more minutes until the raw smell disappears.
3. Add tomato puree and cook until the oil starts to separate from the mixture.
4. Stir in cashew paste, red chili powder, turmeric powder, and garam masala. Cook for a few minutes.
5. Add cream, sugar (if using), and salt. Mix well and simmer for a few minutes until the gravy thickens.
6. Gently place the fried koftas into the gravy. Simmer for a few more minutes.
7. Garnish with chopped coriander leaves.

Your creamy and delicious Malai Kofta is ready to be served. Enjoy it with naan, roti, or rice!
