Egg curry recipe
here's a basic recipe for egg curry:
Ingredients:
- 4-6 boiled eggs, peeled
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 2-3 green chilies, slit (adjust to your spice preference)
- 1/2 cup yogurt
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to your spice preference)
- 1 teaspoon garam masala
- Salt to taste
- Cooking oil
- Fresh cilantro leaves for garnish
Instructions:
1. Heat some oil in a pan or a deep skillet. Add cumin seeds and let them splutter.
2. Add the finely chopped onions and sauté until they turn golden brown.
3. Stir in the minced garlic and ginger, and sauté for a couple of minutes until the raw aroma disappears.
4. Add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate.
5. Reduce the heat and add the dry spices - coriander powder, turmeric powder, red chili powder, and salt. Cook for a few minutes, stirring constantly to avoid burning.
6. Beat the yogurt well and add it to the pan. Stir continuously to prevent curdling.
7. Add a cup of water and bring the mixture to a simmer.
8. Carefully cut the boiled eggs in half lengthwise and add them to the simmering curry. Gently mix so that the eggs are coated with the sauce.
9. Sprinkle garam masala over the top and let the curry simmer for a few more minutes until the flavors meld together.
10. Garnish with fresh cilantro leaves and serve hot with steamed rice or bread of your choice.
