Shahi paneer recipe
basic recipe for Shahi Paneer, a rich and creamy Indian dish:
Ingredients:
For the Shahi Paneer:
- 250g paneer (cottage cheese), cubed
- 1 cup onions, finely chopped
- 1/2 cup tomatoes, pureed
- 1/4 cup cashews, soaked in warm water
- 1/4 cup heavy cream
- 2 tbsp ghee or oil
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 tsp garam masala
- 1/2 tsp ground cardamom
- Salt to taste
- Chopped coriander leaves for garnishing
For the Spice Paste:
- 1/4 cup grated coconut
- 2 green cardamom pods
- 2 cloves
- 1 small cinnamon stick
- 1/2 tsp fennel seeds
Instructions:
1. Heat a pan and add the grated coconut, green cardamom pods, cloves, cinnamon stick, and fennel seeds for the spice paste. Dry roast them until fragrant, then let them cool and grind into a smooth paste with a little water.
2. Heat ghee or oil in a pan. Add chopped onions and sauté until they turn golden brown.
3. Add ginger and garlic paste and cook for a minute until the raw smell disappears.
4. Add the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil starts to separate from the masala.
5. Add the spice paste and cook for a few minutes.
6. In a blender, blend the soaked cashews with a little water to form a smooth paste.
7. Add the cashew paste to the masala and cook for a few more minutes.
8. Add the paneer cubes and mix gently to coat them with the masala.
9. Pour in the heavy cream and mix well. Simmer for a few minutes until the flavors meld together.
10. Add garam masala and ground cardamom. Adjust the seasoning as needed.
11. Garnish with chopped coriander leaves.
12. Serve the Shahi Paneer hot with naan, roti, or rice.
