Here's a simple recipe for Paneer Lababdar:
Ingredients:
- 250g paneer (cottage cheese), cubed
- 1 cup onion, finely chopped
- 1/2 cup tomato, finely chopped
- 1/4 cup cashews, soaked in water
- 1/4 cup cream or malai
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 1 teaspoon kasuri methi (dried fenugreek leaves)
- 1/2 teaspoon sugar (optional)
- 2 tablespoons butter or ghee
- Salt to taste
- Chopped coriander leaves for garnishing
Instructions:
1. Blend the soaked cashews into a smooth paste and set aside.
2. Heat butter or ghee in a pan. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until they turn golden brown.
4. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
5. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften.
6. Once the mixture cools down, blend it into a smooth paste.
7. Heat the same pan again, add a little more butter or ghee if needed. Pour in the blended tomato-onion paste.
8. Cook for a few minutes, then add the cashew paste and mix well.
9. Add the cubed paneer, garam masala, and kasuri methi. You can also add sugar at this point if you prefer a slightly sweeter taste.
10. Pour in the cream and mix gently. Let it simmer for a couple of minutes until the paneer absorbs the flavors.
11. If the gravy is too thick, you can adjust the consistency by adding some water.
12. Garnish with chopped coriander leaves.
13. Your Paneer Lababdar is ready to be served. Enjoy it with naan, roti, or rice!
