ATTA HALWA RECIPE

Ingredients:
- 1 cup whole wheat flour (atta)
- 1 cup ghee (clarified butter)
- 1 cup sugar
- 2 cups water
- 1/4 teaspoon cardamom powder
- Chopped nuts (almonds, cashews, pistachios) for garnishing

Instructions:
1. Heat a heavy-bottomed pan or kadai and add the whole wheat flour (atta).
2. Roast the flour on low heat, stirring continuously to avoid burning. Roast until the flour turns golden brown and you can smell a nutty aroma. This step might take about 10-15 minutes.
3. In a separate pan, heat the water until it comes to a boil.
4. Slowly add the hot water to the roasted flour while stirring continuously to avoid lumps from forming.
5. Be cautious while adding water, as it might splutter. Keep stirring until the water is absorbed by the flour.
6. Add ghee to the mixture and continue to cook, stirring, until the mixture starts to leave the sides of the pan. This might take around 10-15 minutes.
7. Add sugar to the mixture and mix well. The sugar will melt and make the halwa a bit watery initially.
8. Keep stirring and cooking until the halwa thickens and comes together. It should reach a consistency where it can be shaped.
9. Add cardamom powder and mix well for added flavor.
10. Remove the halwa from the heat and let it cool slightly.
11. Garnish with chopped nuts.
12. Serve warm or at room temperature.
